There are few snacks that I love more than puff puff!  I shared the recipe on how to make Nigerian Puff Puff with you guys not too long ago, and you all really seemed to enjoy it! Here I am back with it again, but this time with a twist!! While I can never tire of eating puff puff; it is fun to switch things up from time to time so for this recipe I decided to add bananas!

But that’s not the only twist! I found a new coffee that’s delicious and goes perfectly with these banana puff puff, and I just knew I had to share both with you guys!

   

I’m a huge coffee drinker, and now that I work from home most days I’ve increasingly been making more coffee in the house instead of leaving and visiting shops. The process to make them doesn’t differ from the original puff puff recipe; just one extra step of adding mashed bananas to the batter! Banana Puff Puff with Mocha Salted Caramel Coffee- Afternoon Indulge

Yield: 4-6
Prep Time: 2 minutes
Cook Time: 5 minutes
Total Time: 7 minutes

Classic Nigerian banana puff puff with a twist; soft, chewy and filled with bananas! Add a cup of MAX Indulge Mocha + Salted Caramel, and you’ve got the perfect afternoon snack!

Ingredients

  • 1 cups warm water
  • 1 packet dry active yeast
  • ½ cup sugar
  • 1 teaspoon salt
  • 2 large bananas, mashed
  • 3 cups flour
  • 1 teaspoon Nutmeg
  • Oil for deep-frying

Instructions

  1. In a small bowl, mix the yeast, sugar, nutmeg, salt, and warm water together. Set aside for 5 minutes.
  2. Then add the mashed bananas to the flour.
  3. Gradually begin to add the water mixture to the flour and mix together by hand. The consistency of the mixture should resemble a thick pancake batter. Adjust the amount of water as necessary. **
  4. Cover the mixture with a tea towel, and store in a cool, dark dry area while the mixture begins to rise for about 1-2 hours.
  5. Add vegetable oil to a large pout, about 3 inches high. Heat over medium flame.
  6. When the oil is hot, drop the batter either by hand or with a spoon into the oil.
  7. Fry for 3-5 minutes, until the dough is a golden brown color. The ball should rise to the top, and you may need to flip it so the other side can cook.
  8. Remove the balls with tongs or a slotted spoon and place on paper towels to absorb the oil.
  9. Sprinkle with powdered sugar (not traditional) or serve as is.

Notes

Too much water will make the balls less dense. For dense balls use less water. You can adjust to your liking.
The amount of time it takes for the batter to rise varies. Some say that you should not let the batter sit for more than one hour or the outcome will result in a chewy consistency. When I use active dry yeast I find that allowing the batter to sit for about two hours is just fine.
