Sometimes I get into these moods where I’ll really begin to crave a dish that I’ve had in the past, but don’t really know how to make. It’s starts out small… just a thought, but sooner than later the thought grows into an obsession and before you know; it’s all I can think about. That’s what happened to me this week with this Coconut Curry Chicken Stew.
When it’s cold and rainy the last thing I want to be doing is running errands or having to be out and about. I’d rather nestle in on the couch with a big bowl of soup or chili and spend the whole day indoors watching movies and reading books. Last week’s rainy weather (thanks El Niño) inspired the making of this of my Beef and Roasted Poblano Pepper Chili.
