For me there are few things more comforting than a hearty pasta dish slow cooked in a delicious, meaty ragu sauce. If I could eat pasta everyday I certainly would. Of course being health conscious plays a big role as to why I don’t eat pasta everyday; so when Sweet Earth Foods reached out about partnering on a recipe with their new Awesome grounds product; I knew I wanted it to be a healthy pasta dish. 

Sweet Earth Foods Awesome Grounds is a new raw plant-based protein launching this fall. It tastes just like beef, but completely plant-based made with non-gmo plant-based ingredients like pea & wheat protein. When I first saw this product I was amazed at how much it looked like real ground beef.

Not only did it look just like beef; it also tastes just like beef! My family couldn’t even tell that it was completely plant based. I also love how the awesome grounds provide a great source of protein and fiber, making any meal packed with nutrients.  It’s super easy to cook with and ready to hit the skillet. You can use these awesome grounds as a meat replacement where you would traditionally use beef… like tacos, meatballs, and pasta dishes like this one.

This meatless ragu with cauliflower gnocchi couldn’t be any easier to make. Simply heat a skillet with olive oil and add the awesome grounds to the skillet with some diced onions. Add a jar of tomato based sauce with some seasonings and voila… the sauce is cooked! For the cauliflower gnocchi, I grabbed a pre-packaged frozen cauliflower gnocchi and cooked it according to the package instructions. I normally get my gnocchi from Trader Joes. Once the gnocchi is cooked, add the ragu to the skillet and toss together. So delicious! Check out the recipe below.

Ingredients

For the meatless ragu

  • 1 tbsp olive oil
  • 1 package of Sweet Earth Foods Awesome Grounds
  • 1 24 oz jar of tomato sauce
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 1 tsp Italian seasoning
  • pinch of red pepper flakes
  • salt and pepper

Cauliflower Gnocchi

  • 1 12 oz bag Trader Joe's Cauliflower Gnocchi
  • 2 tbsp butter

Instructions

    For the Meatless Ragu

    1. Heat the olive oil over medium-high heat in a large skillet.
    2. Add the awesome grounds to the skillet along with the garlic and onions and saute until browned; about 10 minutes. Add the jar of pasta sauce to the skillet along with the seasonings and simmer on low for 20 minutes.

    For the Cauliflower Gnocchi

    1. Defrost the gnocchi. Once thawed, pat the gnocchi dry from any liquid.
    2. In a large skillet, heat the butter until melted. Add the gnocchi to the skillet in a single even layer. Brown the gnocchi for 3 minutes on each side. (Do not disturb the gnocchi while it is cooking).
    3. Once the gnocchi has cooked, add the ragu sauce to the skillet and gently toss together.
    4. Garnish with fresh parsley and parmesan cheese if desired.
