Blackened Salmon with Mango Avocado Salsa

Blackened salmon seasoned with a tasty Cajun spice blend and topped with a bright mango and avocado salsa!

Salmon is just one of those things that I could have for dinner every night and not even mind! It’s relatively quick to cook quick, and holds flavor really well. Because of its versatility the possibilities are endless when it comes to flavor combinations, and I wanted to share this blackened salmon recipe inspired by Los Angeles restaurant Jack n Jill’s Too Blackened Salmon Caesar Salad.

This year, S.Pellegrino® asked me to be a part of their Taste Guide Campaign, highlighting local food trends and inspirations, and I just knew putting a twist on Jack N Jill’s Too Blackened Salmon Caesar was the way to go! Amazing things happen whenever salmon is seasoned with Cajun spices and added to a hot skillet with melted butter. The way the spices caramelize and adhere to the fish gives it so much flavor! It’s a nice twist to the way salmon is traditionally prepared, and as always we’ve found a way to add in some heat!

To cut the heat, I made a mango avocado salsa on the side. All I did was dice some mangoes and avocadoes and add them to “pico de gallo”: onions, tomato cilantro, and lime juice. This adds a nice brightness and sweetness to the blackened salmon and really cuts the heat!

Blackened Salmon with Mango Avocado Salsa

Yield: 4
Prep Time: 10 minutes
Cook Time: 15 minutes

Ingredients

  • 4 salmon steaks, room temperature
  • 3 tbsp unsalted butter
  • 4 tbsp of Cajun seasoning (1 tbsp for each piece of salmon)
  • salt ad pepper to taste
  • vegetable oil

Instructions

  1. Brush salmon lightly with vegetable oil. Season with salt and pepper
  2. Dredge each salmon fillet with 1 tbsp of the Cajun seasoning
  3. Preheat a large skillet over medium-high heat (just until smoking). Add butter and once melted add the salmon to the pan and cook on each side for 3-4 minutes. Cook until desired doneness and just until the outer portion turns black.
  4. Serve with mango avocado salsa on top!

    I’m not a huge fan of salmon, but after this recipe – I might be! It looks and sounds delicious! Love the mango addition
