These burrito bites are the perfect appetizer to get you ready for the big game!

Growing up celebrating the big game wasn’t exactly a big deal in my house. While we watched the game, preparing a meal or tailgating for it didn’t really happen. It wasn’t until I got to college where I really started to see the relationship between food and football, and I fell in love with the culture!

My contribution to any tailgate party has always been these burrito bites. They’re the perfect finger food and pack a ton of flavor! It’s like eating a whole burrito, but a much smaller bite.The best part is that this recipe is so easy to make, and comes with a lot of shortcuts as most of the ingredients are all store bought/pre-made.

For the ingredients in these burrito bites, I always head to Walmart to pick up Old El Paso traditional refried beans and taco seasoning. I’ve been using Old Ed Paso products for as long as I  can remember, and my mom always made the best tacos with their refried beans; so there’s some nostalgia for me there.

To assemble these bites you will need 10 inch tortillas, corn or flour. I used corn this time around, but you can use whatever you feel like. Cut them into 4 triangles, and press all four quarters into the bottom of a muffin pan to make a “cup”.

From there you can start to build the bites. Take one tablespoon of the Old El Paso refried beans and place it into the bottom of the tortilla cup. Next take a tablespoon of cooked ground beef and place it on top of the refried beans. Take the back of the spoon and lightly press the ground beef and refried beans into the bottom of the cup. Top with a tablespoon of Spanish rice (make this from scratch or grab a pre-flavored rice packet), and then top with shredded cheese. Cover with aluminum foil and bake for 20 minutes. 

Once these are done in the oven, let them cool for 5 minutes before adding your toppings. For the toppings you have free range on what to use. I like to top mine with pico de gallo, avocado, cilantro, and a dollop of sour cream. You could also do corn, jalapenos, or cotija cheese. Whatever you’re feeling like at the moment.

These burrito bites are the perfect appetizer to get you ready for the big game!

Ingredients

  • 12 10 inch tortillas, quartered into triangles
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet Old El Paso Taco Seasoning
  • 1 can Old El Paso refried beans
  • 1 box Old El Paso spanish rice, cooked according to package instructions
  • 1-2 cups of shreddedMexican cheese

Instructions

  1. Preheat oven to 350 degrees.
  2. Take the quartered tortillas and gently press them into the bottom of a muffin tin.
  3. Brown 1 lb ground beef with diced onions and the packet of taco seasoning. Set aside.
  4. Take one tablespoon of the refried beans and drop into each cup. Add a tablespoon of the ground beef and gently press into the cup with the back of a spoon. Add a tablespoon of the Spanish rice, and top with a sprinkle of your shredded cheese.
  5. Cover with aluminum foil, and bake in the oven for 20 minutes.
  6. After 20 minutes, remove the foil and place back in the oven for 2-3 minutes to allow the cheese to fully melt and become golden brown .
  7. Remove from the oven, and let stand for 5 minutes before adding the toppings of your choice. Garnish with cilantro
