Garlic Butter Salmon with Parmesan Cauliflower Rice

Crispy and delicious garlic butter salmon with a creamy Parmesan cauliflower rice is the perfect weeknight meal! Ready and on your dinner table in just 15 minutes, this is one of my favorite keto and low carb meals! The flavors in this dish are insanely delicious! 

 Garlic, salmon, and parmesan make for such a yummy combination, and it’s definitely one of my favorite recipes. What makes it even better is that it takes no time at all to make. This garlic butter salmon is ready in 15 minutes, and whenever it’s a busy day I make this so that dinner is on the table; fast and easy.

I like to to keep things fairly simple from time to time, and the ingredient list for this recipe is no exception. For the salmon, I used one with the skin. You can use with or without, although the skin tends to make the salmon turn out crispier and more juicy.

Another thing that makes this salmon crispy is the parmesan cheese. You want to use freshly grated parmesan cheese and not the powder; the flavor is a million times better. I mixed the cheese with seasonings and that became my “breadcrumb” topping. You can add panko breadcrumbs, but if you’re keeping this recipe keto friendly then omit.

To go along with the salmon, I made a parmesan cauliflower rice. Cauliflower has quickly become one of my favorite vegetables since switching to the keto diet, and I’ve had lots of fun coming up with different ways to make it, like my cauliflower mash with meatballs and gravy. You can use one medium sized head of cauliflower which will give you about 3 cups. If you’re not into making your own cauliflower rice; you can buy already ready riced cauliflower in the frozen aisle section of you’re grocery store.

I used the juice and zest of one lemon along with parsley to flavor the cauliflower rice. For a touch of creaminess, I also added a tablespoon of sour cream. This is completely optional, but I love the tang and creaminess it adds. Checkout the recipe for this delicious meal below.

Garlic Butter Salmon with Parmesan Cauliflower Rice

Ingredients

For the salmon

  • 2 pounds wild salmon fillet
  • 1/2 cup fresh Parmesan, finely grated
  • Salt and fresh cracked pepper
  • 2 large cloves garlic, grated
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 4 tablespoons unsalted butter divided

For the cauliflower rice

  • 3 cups riced cauliflower (about 1 medium head)
  • 1/2 cup white onion, chopped
  • 2 large cloves garlic minced
  • 2 tablespoons vegetable stock
  • Juice + zest of one lemon
  • 1 tablespoon sour cream
  • Red chili pepper flakes, optional
  • 1/4 cup fresh parsley chopped

Instructions

For the Salmon

  1. Preheat oven to 400°F. Line a baking tray with a large piece of foil. Place the salmon fillet, skin side down, on the baking sheet.
  2. In a shallow plate, combine 2 tablespoons of melted butter, parmesan cheese, grated garlic, paprika, and Italian seasoning. Season the salmon with salt and pepper; dredge in the parmesan mixture; shake off excess and set aside.
  3. Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork.


For the cauliflower rice

  1. Heat a large skillet over medium-high heat. Melt 2 tablespoons of butter, and fry the garlic and onion for 1 minute until fragrant.
  2. Add the riced cauliflower to the skillet and stir to mix everything together. Continue to cook for 1 minute.
  3. Stir in the 2 tablespoons vegetable stock, 1 tablespoon sour cream, about half the parsley, and lemon zest. Cook for one minute; then add the lemon juice and a few sprinkles of leftover parmesan cheese.
  4. Stir in the remaining parsley.
  5. Serve with the salmon on top of the cauliflower rice.

    There’s no mention of the 4 tbsp of butter in preparing the salmon. I’m assuming you melt it and it’s part of the Parmesan and spices mixture that you coat the salmon in?
