This Tuscan salmon recipe is so creamy and delicious! It’s so easy to make and has quickly become one of my new favorite ways to make salmon!

This is a recipe I like to call luxurious and decadent! Tender, flaky salmon in a garlic butter spinach and cherry tomato cream sauce – its ridiculous how delicious this dish is! On top of that, it only takes 30 minutes to make! Start to finish, this tuscan salmon is an easy recipe that you can have any night of the week and still feel like you ordered dinner from your favorite fancy restaurant!

INGREDIENTS LIST FOR THE CREAMY TUSCAN SALMON

salmon fillets

olive oil

butter

cherry tomatoes

salt and black pepper

parsely

heavy cream

parmesan cheese

garlic

onion

fresh spinach

vegetable stock

olive oil

freshly squeezed lemon juice

To make this tuscan salmon you’ll first start off by seasoning the salmon fillets on both sides with salt and black pepper. Then saute them in a hot pan with olive oil. Start with the flesh side down then flip over and cook the side with skin. You only want to cook both sides just until they brown and the edges are crispy. Remove from the pan as they will continue to cook later in the cream sauce. To that same pan add some more butter and saute the garlic just until it becomes fragrant; then add your onions and cook until translucent.

Add the cherry tomatoes and cook for about 2 minutes. Then add the heavy cream reduce the heat to low and simmer the sauce. At this point give the sauce a taste and if you need to add more salt and black pepper do so. Then add the parmesan cheese. Once the cheese melts add in the spinach and cook until the spinach wilts. Add the salmon fillets back to the pan with the sauce and allow to cook for an additional 5 minutes. That’s it! How easy was that? Check out the recipe below!

Ingredients

  • 3 salmon fillets
  • 2 teaspoons olive oil
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 1 small sweet onion, chopped
  • 1/3 cup vegetable broth
  • 1 1/2 cups cherry tomatoes, halved
  • 1 1/2 cups heavy cream
  • salt and black pepper to taste
  • 3 cups fresh baby spinach leaves
  • 1/2 cup parmesan cheese
  • fresh parsley, garnish
  • fresh squeezed lemon juice, garnish

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Season the salmon filets on both sides with salt and pepper, and sear in the hot pan, skin-side down first. Sear for 5 minutes on each side until browned. Once salmon filets are cooked, remove from the pan and set aside.
  2. In the same pan, melt the butter. Add in the garlic and saute until fragrant. Add the onion and saute until translucent. Add the cherry tomatoes and saute for 1-2 minutes just until they start to become tender. Finally, pour in the vegetable broth, and allow the sauce to reduce down slightly. 
  3. Reduce the heat to low, add the heavy cream, and bring to a simmer. Stir occasionally. Season the cream sauce with additional salt and pepper to your taste.
  4. Add in the baby spinach and cook just until it wilts. Add in the parmesan cheese. Allow the cream sauce to simmer for a further minute until cheese melts through. 
  5. Add the salmon filets back into the pan and cook for an additional 5 minutes. Garnish with the parsley, and spoon the sauce over each filet. Garnish with freshly squeezed lemon juice. Serve the creamy Tuscan salmon over steamed vegetables, rice, or pasta Enjoy!
